Sugar and Gluten Free Banana Bread

There are a lot of benefits to be gained from eating bananas, amongst other things, they help overcome depression due to high levels of tryptophan and improve mood.  They can also reduce PMS symptoms as they regulate blood sugar and produce stress relief.  Bananas are also high in potassium and low in salt, resulting in bananas being officially recognised by the FDA as being able to lower blood pressure and protect against heart attacks and strokes. I am not going to list out every benefit here, but one well known fact is that bananas are naturally sweet, so they are perfect for sugar free baking.

♥ 100g butter, softened
2 eggs
87g stevia
♥ 225g gluten free self-raising flour
♥ 1 teaspoon baking powder
♥ 3 tablespoons milk
2 very ripe bananas, mashed
♥ handful of poppy seeds to sparkle on top


♥ Preheat the oven to 180C (160C fan oven). Line a loaf tin with baking paper.
♥ Measure the butter, eggs, stevia, flour, baking powder, milk and bananas into a bowl.
♥ Personally, I like to beat the egg white with the stevia into foam and fold into the rest of the ingredients until combined.
♥ Pour the batter into the lined tin and sprinkle some poppy seeds on top. Then bake for about 25 minutes until well risen and golden brown.
♥ Remove the bread from the tin and set aside to cool.
