Andrew is very time poor during the week, so we rarely have time for a sit-down breakfast in the morning. I know that if I do not prepare breakfast for him, he will not have anything until midday. Therefore, I love making breakfast juice/smoothie so that he can enjoy a nutritious breakfast on the go.
Here is one of the staple smoothies which I make weekly. This is packed with healthy greens and you will feel you are heading for a good morning start even just by looking at the colour of the end product!
1/6 of a large pineapple, peeled but leave the core
A small handful of water cress
A small handful of parsley, cut of the stems
A small handful of spinach
1/4 of a large cucumber
2 stalks of celery
1/2 inch of ginger
1/4 lime, leave the rind for organic lime
1/4 lemon, leave the rind for organic lemon
1 kiwi fruit
2 heaped tbsp of natural yogurt
1/2 cup of ice cubes
Juice all of the above ingredients except for the kiwi fruit, yogurt and ice cubes. Then blend the juice with the kiwi fruit, yogurt and ice cubes.
